Easy Festive Tofu Roast with Rosemary Potatoes Vegan Recipe

Ingredients

Serves 2

Main Ingredients:

  • 1 block firm tofu, cubed
  • ½ an apple, cubed
  • 4 potatoes (about 12 oz), cut into wedges
  • 1 tsp dried rosemary
  • Olive oil
  • Salt and pepper

Marinade:

  • Juice of 1 large orange
  • 1-inch piece of ginger
  • Juice of 1 lemon
  • ½ an apple
  • ¼ tsp ground cinnamon
  • ½ tsp grated nutmeg
  • 3 garlic cloves
  • ½ tsp salt + ¼ tsp salt
  • 12 whole cloves

Preparation

1. Prepare the Marinade:

  • Add all the marinade ingredients (except the whole cloves) to a blender and blend until smooth.

2. Marinate the Tofu:

  • Place the tofu and apple cubes in an airtight container. Pour the marinade over them, toss in the whole cloves, seal the container, and shake gently to coat.
  • Refrigerate for at least 2 hours, but preferably overnight, to allow the flavors to infuse.

3. Roast the Tofu:

  • Preheat the oven to 400°F (200°C).
  • Transfer the marinated tofu and apples to a greased baking dish. Drizzle with olive oil, cover the dish with foil, and place it on the bottom rack of the oven.
  • Bake for 45 minutes.
  • Remove the foil, give the tofu a quick mix, then return the tray to the top rack, and roast for an additional 30 minutes or until the liquid evaporates and the tofu starts to golden a bit.

4. Prepare the Potatoes:

  • While the tofu finishes baking, line a baking tray with parchment paper.
  • Toss the potato wedges with dried rosemary, a pinch of salt, and enough olive oil to coat evenly.
  • Spread the potatoes in a single layer on the tray and place them on the bottom rack of the oven.
  • Bake until tender and golden, about 30 minutes, flipping halfway through.

5. Serve:

  • Plate the roasted tofu alongside the crispy rosemary potatoes.
  • Pair with a fresh green salad or sautéed green beans for a complete festive meal.
