Here’s a hearty spin on the classic banana bread. This recipe is very easy to put together, and it doesn’t require any fancy ingredients or gadgets; use whichever baking pan you have, and play around with the spices and nuts to make it your own.
Ingredients:
2 large ripe bananas
2 small sweet potatoes (about ⅔ cup), boiled until tender
¼ cup olive oil
1 tsp vanilla extract
⅓ cup brown sugar
½ tsp cinnamon
½ tsp nutmeg
½ tsp salt
½ tsp baking powder
½ cup chopped nuts (walnuts or pecans)
1 ½ cup all-purpose flour
1 tbsp apple cider vinegar
1 tsp baking soda
Preparation:
- Preheat the oven to 350 F.
- In a large mixing bowl, mash the bananas and sweet potatoes with a fork until smooth.
- Incorporate the following to the bowl (in the amounts specified above): olive oil, vanilla, sugar, cinnamon, nutmeg, salt, baking powder and chopped nuts. Mix well.
- Fold in the flour and thoroughly combine it until you get a smooth and sticky batter.
- Pour in the vinegar, and then the baking soda, mixing these quickly into the batter.*
- Pour the batter in a greased or lined baking pan, and bake for about 45-50 minutes or until a knife in the center comes out clean.
- Allow it to cool before serving.
* When vinegar and baking soda are mixed, they produce a chemical reaction that can act as a leavening agent, but this reaction does not last forever, so once these are incorporated into the batter, the mix should go in the oven as soon as possible.
