Vegan Cobb Salad Recipe

This vegan Cobb salad is a fresh and satisfying take on a classic favorite. Ingredients:

  • ½ block (8 oz) hard tofu
  • Romaine or iceberg lettuce
  • 1 cup cherry tomatoes, sliced
  • ½ a red onion, diced
  • 1 hass avocado, cubed
  • 1 can cooked chickpeas
  • 2 Persian cucumbers, sliced
  • Vegan ranch dressing
  • Soy sauce
  • Mustard
  • Paprika

Preparation:

  1. Cut the tofu into small strips and marinate for a few hours or overnight with 2 tablespoons of soy sauce, 1 teaspoon of paprika, and 1 teaspoon of mustard.
  2. After marinating, heat a pan over medium-high heat with 2-3 tablespoons of oil. Fry the tofu until crispy.
  3. Prepare all the vegetables for the salad: slice the cherry tomatoes, dice the red onion, cucumbers, and avocado, and shred the lettuce.
  4. To serve, lay the shredded lettuce at the bottom of a bowl or plate. Top with rows of avocado, onion, chickpeas, tomatoes, cucumbers, and crispy tofu.
  5. Drizzle with vegan ranch dressing or any other dressing of your choice. We made our own vegan ranch dressing by combining 1 cup vegan mayo, 1 tablespoon apple cider vinegar, ¼ cup water, 1 teaspoon mustard, 1 tablespoon finely chopped chives and parsley, and ½ teaspoon each of garlic powder, onion powder, and dill powder.

Hot tips:

  • For a hint of sweetness, you can add beets, sweet corn, or shredded carrots.
  • For a less intense onion flavor, substitute the red onion with green onions.
