Vegan Veggie Pancakes Recipe

Ingredients:

  • About 2 cups shredded cabbage
  • 2 carrots, grated
  • 2 zucchinis, cubed or grated
  • ½ cup chopped parsley
  • ½ red onion, diced
  • 2 stems green onion, sliced
  • 2 garlic cloves, grated or mashed
  • 1 cup all-purpose flour, or as needed
  • 1 tsp salt (no more)
  • Black pepper, to taste
  • 1 tbsp mustard
  • ½ tsp sugar
  • 1 tbsp ground flax seeds + 1 tbsp water (for binding)

Directions:

  1. Preheat the oven to 420°F.
  2. In a large bowl, mix all the ingredients until well combined.
  3. Scoop the mixture into balls and flatten with the back of a spoon to form patties.
  4. Lay the patties on 2 lightly greased baking trays. This recipe makes about 12 patties.
  5. Bake in the preheated oven for about 30 minutes or until golden, flipping halfway through.
  6. Once baked, remove from the oven and let cool slightly before serving. Enjoy!
