Ingredients:
- About 2 cups shredded cabbage
- 2 carrots, grated
- 2 zucchinis, cubed or grated
- ½ cup chopped parsley
- ½ red onion, diced
- 2 stems green onion, sliced
- 2 garlic cloves, grated or mashed
- 1 cup all-purpose flour, or as needed
- 1 tsp salt (no more)
- Black pepper, to taste
- 1 tbsp mustard
- ½ tsp sugar
- 1 tbsp ground flax seeds + 1 tbsp water (for binding)
Directions:
- Preheat the oven to 420°F.
- In a large bowl, mix all the ingredients until well combined.
- Scoop the mixture into balls and flatten with the back of a spoon to form patties.
- Lay the patties on 2 lightly greased baking trays. This recipe makes about 12 patties.
- Bake in the preheated oven for about 30 minutes or until golden, flipping halfway through.
- Once baked, remove from the oven and let cool slightly before serving. Enjoy!
